Sweet Potato Casserole

4 pounds sweet potatoes
4 cups milk
8 eggs
2 teaspoons salt
Nutmeg, allspice, ginger, whathaveyou
1/2 teaspoon pepper
1/4 cup maple syrup
Bake the sweet potatoes a 400 degree oven or in the microwave until very soft. Mix together milk, eggs, salt, spices, and pepper. In batches, process the skinned sweet potatoes with the milk and egg mixture. Bake for 50 minutes in a 300 degree oven.
