Maple-Ginger Sweet Potatoes

Sorry, not too much measuring went on here.

4 Sweet potatoes, baked, peeled, cubed

2-ish tablespoons maple syrup

S and P

1 teaspoon grated ginger

Allspice, cardamon, nutmeg (However much you like of each dried spice.  I really love allspice, so I was heavier with that.  Cardamon is the type of thing people like but can never pick out.  Don't over-do the nutmeg.)

Splash of balsamic vinegar

 

Toss the sweet potatoes with the remaining ingredients.  Pour into a rectangular baking dish.  Top with a mixture of 3 tablespoons soft butter, 3 tablespoons brown sugar, a handful of pecans, 1 tablespoon flour, and a drizzle of maple syrup crumbed together.  Bake in a 350 degree oven until bubbly and the praline topping is crunchy.  Delcious.
