Creamy Christmas Mints

2 ounces softened cream cheese

2 1/2 cups powdered sugar

3-6 drops of peppermint extract

Granulated sugar

Food coloring

Mix the first 3 ingredients in a stand mixer, kneeding for 10 minutes (really, I didn't do it that long).  Roll bits of the dough into marble-sized balls, then roll them in granulated sugar.  Lay them on parchment or Silpat, then flatten them into a disk by pressing with a glass.  Decorate using the tines of a fork or a toothpick to make designs.  Allow them to dry until you can remove them to a tin and they won't stick together.  We made half of ours white and the other half pink.  Delicious.  I have also heard you can make these with lemon, maple or almond extract.  Interesting.
